
White sandwich loaf
This is a great base white dough to make supermarket style breads, rolls, burger buns, hot dog rolls etc.
Recipe makes 1 large sandwich loaf or 9 x 65g rolls or 7 x 85g burger buns.
125g tapioca flour
70g potato starch
45g cornflour
10g rice flour
10g HPMC
8g pea protein
8g fast action yeast
7g salt
250g water (body temp)
30g veg oil
12g golden syrup
-combine all the dry ingredients
-add wet ingredients and mix on a medium speed for 5 minutes. Scrape down the bowl and mix for a further 1 minute.
-transfer to a lightly floured surface and shape into a loaf. This is a fully workable dough so you can shape however you like, can also be divided into rolls.
-cover and prove for approx 50 mins. (Due to the HPMC you will be amazed how much this rises during proving. A 600g loaf will fill a 2lb loaf tin!)
-spritz the top of the loaf with water and, using A LOT of steam, bake at 220C/200C fan for 40 mins.
-allow to cool before slicing.
