Bao buns

Makes 4 x 60g buns

 

140g 01 Flour Blend

1 tsp baking powder

1/2 tsp instant yeast

1 tbsp sugar

Pinch of salt


1 tbsp oil

60g water (body temp)

50g milk (body temp)

 

-Mix all together to create dough, will be a bit sticky but should come away from side of the bowl.

-Cover and refrigerate for 15 minutes.

-Sprinkle work surface with a tiny amount of flour (rice or any basic blend is fine, don’t waste your 01 Flour Blend)

-Knead it to create a smooth pliable dough.

-Divide into 60g pieces and roll into balls.

-Using a small amount of flour, shape each ball into an oval. Can use rolling pin or press by hand, whatever you prefer.

-Rub the surface of the dough ovals with oil and brush a little oil over a chopstick. Place the oiled chopstick in the centre of each oval. Fold the dough over the chopstick, then slowly pull out the chopstick.

-Place each piece on a small square of baking parchment, cover, and allow to prove for 45-60 minutes.

-Steam for 10 minutes, serve warm with your choice of fillings.
