Our 01 Flour Blend is a specialist gluten free wheat starch-based flour blend developed for making high-quality breads and doughs that can be mixed, shaped and handled by hand.

Unlike many gluten free flour blends that produce a batter like dough, 01 is formulated to create a fully workable, cohesive dough with the flexibility needed for shaping pizzas, focaccia, flatbreads and other yeasted products.

The blend combines gluten free wheat starch with maize starch, buckwheat flour, rice starch, psyllium powder and guar gum. Together, these ingredients provide a balance of structure, elasticity, water management and dough stability, allowing you to work with the dough rather than simply spooning it into a tin.
