Our Southern Fried Coating is a ready-to-use blend of potato starch, cornflour and classic Southern-style spices, designed to give you a deeply crisp, craggy coating with plenty of flavour.

It fries up light, crunchy and golden, with smoked paprika, garlic, chilli, onion and white pepper bringing the seasoning. And because the coating is already seasoned, there's no need to build your own spice mix.

It was made for fried chicken, but don't stop there. Use it for crispy cauliflower wings, chicken burgers, mushrooms, tofu or whatever else deserves a proper crunchy coating.

How to use

For deep frying:

1. Marinate your ingredient in seasoned buttermilk or a vegan alternative.
2. Dredge thoroughly in the Southern Fried Coating.
3. Leave for 5 minutes so the coating can hydrate and adhere.
4. Shake off any excess.
5. Deep fry at 170°C until golden and cooked through.
6. Drain and serve immediately.

For air frying:

1. Marinate in seasoned buttermilk or a vegan alternative.
2. Coat thoroughly.
3. Leave for 20 minutes to allow the coating to fully absorb.
4. Shake off any excess and spray lightly with oil.
5. Air fry at 190°C, turning every 3 minutes, until golden and cooked through.

What's in it?

Potato starch creates the crisp, light coating.

Cornflour adds structure and helps develop that characteristic fried texture.

Smoked paprika, garlic, chilli, onion and white pepper provide the Southern style seasoning and depth of flavour.
