Glutinous rice flour

Used widely in Asian cooking to create mochi, rice cakes and dumplings. Produced from short grained rice that gives it a very sticky and chewy texture when cooked.

It can be used in small amounts in gluten free breads to enhance the crumb and crust whilst also extending its freshness.
