Gluten free artisan style loaf

This artisan style loaf has it all…thin crisp and chewy crust, beautifully light crumb with proper structure, and most importantly a flavour profile that could rival any loaf!

The best bit? It uses just 1 flour!! 
Our 01 Flour Blend is so versatile, from bagels to focaccias via artisan loaves and pizza - there’s not a lot it can’t do!
Like ‘normal’ flour, you can achieve a range of breads by simply changing the hydration, which makes 01 Flour Blend utterly unique.

Artisan loaf recipe (makes 1 x 600g loaf)

330g 01 Flour Blend
8g salt
7g instant yeast

265g lukewarm water
15g cider vinegar
10g black treacle
15g oil

Method -
-Combine dry ingredients
-Add liquids and mix for 3 minutes. Scrape down bowl and mix for a further 2 minutes.
-Cover and rest for 10 minutes.
-Tip out dough onto lightly floured surface (rice flour is best) and shape however you desire.
-Cover and allow to rise for approx 1 hour.
-Score with a very sharp knife.
-Bake at 220C/200C fan with lots of steam or in a Dutch oven.
-Bake for 25 minutes before removing the lid of the Dutch oven, or carefully opening the oven door to release excess steam.
-Bake for a further 25 minutes.
-Allow to cool FULLY before slicing.
